Paleo Hashbrown Casserole

Things are crazy in the world. And we all have our differences, but I think we can agree on one thing.

Breakfast is REALLY hard to prep ahead of time.

But this casserole is going to change alllll that. You can make this on the weekend and have a macro friendly breakfast ready for the whole week!

Ingredients:

  • 1 lb ground sausage

  • 12 eggs

  • 3 russet potatoes

  • 2 cups kale

  • 1 sweet onion, diced

  • 1 bell pepper, diced

  • 1/4 cup coconut milk

  • 2 tsp salt

  • 1 tsp garlic powder

  • 1 T everything seasoning

  • 2 T avocado oil

  • Optional toppings: avocado, green onions, ketchup, shredded cheese

Directions:

  1. Preheat oven to 350 and grease 13x9 baking dish with avocado oil.

  2. Add 1 T of avocado oil, diced onion, and sausage to pan and cook on medium heat until browned.

  3. Peel and grate potatoes into a large bowl. Add kale, peppers, salt, garlic, and everything seasoning to bowl and mix well. Add mixture to greased baking dish.

  4. In another bowl, whisk eggs and coconut milk together. Pour on top of baking dish and gently mix.

  5. Bake for 45-60 minutes until eggs are cooked through.

  6. Top with avocado, green onions, ketchup, or shredded cheese if desired.

You’re going to be SO GLAD when you can spend a few extra minutes snoozin because you already have a delicious breakfast ready to go.
